Maharashtrian style palak paneer Recipe:
Palak paneer in maharashtrian style is a rustic, homey curry made with fresh spinach, soft paneer, and typical desi tadka using goda masala, ginger - garlic, and groundnut oil. It's simple, nutritious, and full of earthy flavor- just like it's made in a marathi home.
Ingredients
- Bunches spinach (palak) -washed and chopped.
- 200 grams paneer - cut into cubes.
- 1 medium onion - finely chopped.
- 1 medium tomato - finely chopped.
- 4-5 garlic cloves.
- 1 inch ginger.
- 1 green chili.
- 1/2 tbsp cumin seeds(jeera)
- 1/4 mustard seeds (rai)
- 1 pinch asafoetida (hing)
- 1/2 tbsp turmeric powder.
- 1/2 tbsp goda masala (garam masala)
- Salt - to taste.
- 2 tbsp groundnut oil (or any cooking oil
How to make maharashtrian style palak paneer.
Step 1: Prepare spinach puree
1.Blanch spinach in boiling water for 2-3 minutes.
2. Immediately transfer to cold water.
3.Grind it garlic, ginger, and green chilli into a coarse paste.
Step 2 : Fry paneer(optional)
- Lightly saute paneer in a teaspoon of oil until golden. Keep a side.
1. Heat oil in a kadhi.
2. Add mustard seeds. Cumin seeds, and a pinch of hing.
3. Add chopped onions saute until translucent.
4.Add tomatoes, turmeric, red chili powder,and salt.
5. Cooking til tomatoes are soft and oil starts separating.
- Step 4 : Add spinach puree.
- Add the spinach mixture and cook for 5-7 minutes.
- Add 1-2 tbsp water if it's to thick.
- Add paneer cubes and goda masala.
- Cook for 2-3 minute on low flame.
- Serve hot with chapati, bhakri or rice.
- Add a dollop of homemade ghee for extra richness.
- Use goda masala for a truly maharashtrian flavor.
- You can add roasted peanut powder for a nutty taste.
