Ingredients

  • 250 bhindi (okra/lady finger) washed & chopped
  • 1 medium onions, finely sliced
  • 1 tomato, chopped
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder (adjust to taste) 
  • Salt to taste
  • 1/2 tsp garam masala
  • Fresh coriander, chopped (for the garnish)

 Instructions

   Step 1: preparation:
  •  Wash bhindi and Pat it dry completely before chopping. This helps avoid stickiness. 

Step 2: cooking

  • Heat oil in a pan. Add cumin seeds and let them splutter. 
  • Add sliced onions and saute until golden.
  • Add chopped tomatoes and  cook till soft. 
  • Add turmeric, red chili, coriander powder, and salt. Mix well. 
  • Now add bhindi and mix well gently. 
  • Cover and cook on low flame for 10-20 mins, stirring occasionally. 
  • Once bhindi is cooked and non-sticky, add garam masala. Mix and cook for another 2 mins. 
Step 3:

  • Garnish with fresh coriander leaves and serve hot.
